Vegetarian recipy Italian boekoeloekoe balls in vegetable-tomato sauce
Ingredients for 4 people
For the sauce:
2 small onions
2 cloves of garlic
250 grams of carrot
4 stalks of celery
2 tbsp tomato puree
1 liter passata (sieved tomatoes)
2 tbsp nutritional yeast flakes
Optional: Fresh Basil and/or Parmesan cheese
For the balls:
1 bag of basic mix Boekoeloekoe
2 small eggs
1 tbsp Italian herbs
1 small onion, chopped
Piece of Parmesan cheese (about 30 grams), grated
Preparation method
Make the balls by combining all the ingredients in a bowl. Stir well and place in the refrigerator for 15 minutes.
In the meantime, chop the onion and garlic. Cut the celery and carrot into small pieces. Fry the onion together with the garlic until translucent. Then add the carrot and celery. Put a lid on the pan and let it simmer for a few minutes. Increase the heat, add the tomato puree and fry briefly. Then add the passata.
Using damp hands, roll the dough into 12 small balls. Carefully place them in the sauce and immerse them. Bring everything to a gentle boil for about 10 minutes. Turn off the heat and stir in the nutritional yeast. Taste and season with salt and pepper if necessary. When serving, optionally sprinkle some fresh basil and/or extra Parmesan cheese on top.
