Boekoeloekoe spinach puff pastry triangles


Ingredients vegetarian recipe for 8 pieces

1 sachet of Boekoeloekoe basic mix
250 grams chopped spinach (frozen)
1 red onion
2 eggs (1 to brush the puff pastry)
50 feta white cheese
125 ml of water
8 flat puff pastry

Preparation method

Defrost the spinach and let the released moisture drain well. Chop the onion finely. Crumble the feta into small chunks. Mix the basic mix with all ingredients, except the puff pastry. Place in the refrigerator for 20 minutes to firm up. Defrost the puff pastry sheets on a baking tray lined with baking paper/baking mat.

Preheat the oven to 200 degrees (convection). Spoon a generous tablespoon of the mixture into a corner of the puff pastry (keep the edges free) and fold in half to form a triangle. Press down the sides with a fork. Beat an egg in a bowl and cover the top of the flaps with it.

Put them in the oven for about 15 minutes. Delicious with chili sauce and steamed vegetables
